Pizza al taglio is the pizza of Roman lunch counters — long rectangular trays, high-hydration dough with a light open crumb, cut with scissors and priced by weight or by slice. At Pizzicotto we bake it Roman-thick, crisp underneath, chewy in the middle.

Alongside the trays: pillowy focaccia bread stacked with mortadella, coppa and stracciatella, a whole cheese counter of imported wheels, and an aperitivo hour with real Italian bar snacks. Then coffee. Always coffee.
